You might recognize Virgilio Martinez from his super-acclaimed restaurant, Central, in the Miraflores neighborhood of Lima. If you haven't made it to Peru yet, maybe you've heard of it — it's frequently written up as one of the world's best. He's really, really good at what he does and takes a “we cook ecosystems.” philosophy with his cooking. This is not quite a cookbook, but more a truly beautiful coffee table book with essays, travel and food photography, and, yes, plenty of recipes.
